dc.description.abstractThe kinetics of growth of two brewing yeast strains in relation to ergosterol synthesis and glycogen dissimilation after pitching was comparatively investigated.lt was established the direct relation between wort oxygen content and new yeast biomass formed from, ergosterol synthesis and glycogen dissimilation. Different kinetic models are synthezed explained the influence of oxygen of the yeast growth based on the experimental data obtained. © 1993 Taylor & Francis Group, LLC.
